Heyer Performance is the brainchild of Managing Director, Julia Heyer. With over 15 years of experience in the restaurant industry, a degree in Hospitality Management from Cornell University and extensive expertise in optimizing and developing restaurants, she is an energetic force of nature.

Her range of skills spans from the macro—creating big picture strategies, as she did for an international brand marketing firm looking to expand their Davidoff brand into the restaurant industry—to the micro, as when she employed her very specific and detail-oriented F&B skills to consult the controlling team at Alain Ducasse at the Essex House.

For SUSHISAMBA restaurants, she was involved with creating structures, systems and programs for quality management, training, benchmarking, IT systems management, sales, forecasting & cost controlling, use of data analytics for daily use and application in the operations, all while remaining a part of concept development and operational management along the way.

In her position as Director of Development & Continuous Improvement at Richard Sandoval’s Modern Mexican Restaurant Group, she was responsible not only for the development and management of new ventures, but for the continuous improvement of the existing restaurants.

Besides developing and opening restaurants of MMR’s brand portfolio, Julia led the creative team in the initial development of the new restaurant concept, La Sandia. She has managed the development, rollout and openings of these units and other restaurants brands.

Over time, Julia has been involved in and managed over 15 restaurant developments, openings and re-positionings with overall budget responsibilities exceeding $28 Million.
